Bekah, 27, aka blogger @bitesbybekah, is a PHD music student specialising in the clarinet. After some health issues Bekah developed a passion for plant-based food and began Bites by Bekah. Born in the US, she has been living in London for the past five years. She is particularly obsessed with sweet potatoes, grapes and beautiful breakfast bowls…

Why did you launch Bites by Bekah?

Launching my food blog Bites by Bekah in August 2018 was a long time coming. In March 2016, I was having issues with fatigue, digestion and other health problems.  So, I decided to take matters into my own hands and did my own research into health and nutrition. I came across the plant-based diet and everything all made so much sense to me.

I had never really thought about where my food came from, or the great impact it could have on my health.

So I decided to give plant-based eating a try and radially changed my diet overnight.  Right away I started feeling positive benefits, and I haven’t looked back since!  I immediately fell in love with the vibrant foods and colourful bowls! I developed a real passion for experimenting with recipes, taking photos of food, and creating a community to share it all with on Instagram @bitesbybekah.

I always wanted to get into food blogging, but never felt quite ready. Last summer, I finally decided I needed to just go for it, and I took the plunge. I’ve been loving getting into the blogging space.

How would you describe your blog and feed?

Bites by Bekah is all about sharing easy and budget-friendly plant-based meals that are nutritious and energising.

My Instagram and blog feature my tips, tricks and thoughts on living a vegan plant-based lifestyle, with bits (or bites!) of everyday life sprinkled in as well.

I love to share food that is colourful and appetising, to show how exciting and appealing plant-based meals can be! At the same time, I keep it super simple.

As a full-time student, I want to show how easy, healthy and affordable it can be to incorporate vegan food into your lifestyle.

What are you learning from your instagram/blog journey?

This whole journey has been a constant learning experience, for which I am incredibly grateful! It’s such a privilege to be able to connect with amazing people from all over the world. I’m very thankful for the friendships and opportunities it has brought into my life.

As a perfectionist I used to shy away from sharing anything unpolished, but my Instagram and blog have allowed me to open up and be more unfiltered about my life. I’ve come to realise that there’s power in sharing where I am along the way.

This experience has also taught me a lot about patience. I want to be able to do everything, but I just don’t have the capacity right now – and that’s ok!

We’re all on our own journeys and it’s about making the most of our present circumstances and doing the best we can.

Describe your upbringing, how important was healthy eating?

I grew up eating a lot of unhealthy foods. Eating out and getting take-aways was a common occurrence, and soda and crisps were daily staples in my diet. My eating habits looked a lot different to what they are now! As I got older, I began to think more about what I was eating.

I gradually began to learn more about the impact food can have on my health and wellbeing.

What is the mission of Bites by Bekah?

To show people how easy, vibrant and delicious plant-based eating can be, and to inspire people to include more plants into their meals!

Why did you decide to collaborate with Glowcation?

The minute I heard about Glowcation, I knew I wanted to get involved. I’d already been sharing vegan spots around London on my own blog, so it seemed like a natural fit. I’m also always looking to expand my own plant-based eating bucket list, so this was a perfect way to discover more places myself and to share those healthy eateries with even more people.

What are you excited about?

It’s very exciting to see how much plant-based vegan eating has grown over the years, and how it’s still exponentially expanding!

I love seeing new options and eateries popping up all the time, and I feel privileged to be a part of sharing that with others. I’m excited to continue sharing and being a part of the rising movement in healthy and plant-based eating!

What are the top 5 things in life that make you glow?

There are so many! Some of the big ones are definitely:

  • spending time with my family and friends
  • my faith in Jesus
  • eating the rainbow on a plate
  • getting lost in a good story (through a book, film or tv show)
  • and spending time outside in nature (I especially love the sunshine!).
