The ultimate Winter nourishing butter

It’s buttery, perfectly spiced and a great topping for warm, freshly baked bread. Pecans are one of the most delicious nuts, in my opinion. They have a delicious caramel flavour to them that works perfectly as a base for raw cheesecakes or in chewy oat cookies. This maple pecan butter is dangerously moreish; you’ll be dolloping it on everything and maybe even spooning it straight out of the jar (guilty).

Ingredients (fills a small pot)

150g of pecans
1 tsp of cinnamon
2 tsp of maple syrup

Start by lining a baking tray with parchment paper, coat the pecans in the maple syrup in a separate bowl and spread them out on the tray for roughly ten minutes (180). Make sure you keep an eye on them as they can burn quickly. Allow to cool, then blitz all of the pecans in a food processor along with the cinnamon. You’ll want to blend until a buttery mixture forms by the pecans realising some of their oils. It may take a few minutes.

If you’re looking for an easy brunch idea, spread the pecan butter on some fresh sourdough toast; add a dollop of creamy coconut yoghurt and slice up some figs to sit on top. Play around and have fun with your toppings, there are so many combinations to try.
