Festive energy balls? These Salted Caramel Snowballs tick the box.

I love making energy balls as they’re pretty durable (they handle being thrown around in my bag very well), last a long time and are packed full of goodness.

These salted caramel snowballs are both salty and sweet at the same time whilst having the most indulgent gooey texture. The combination of maca powder (my favourite superfood), pecans and medjool dates perfectly mimic the taste of salted caramel, finished with a touch of sea salt. They’re ideal on the go as a mid afternoon snack, or as a healthy dessert alternative.

Ingredients (for 15 balls)

½ cup of pecans
1 cup of cashews
1 cup of medjool dates, pitted and chopped
2 tbsp of maca powder
2 tbsp of almond butter
A pinch of sea salt
¼ cup of desiccated coconut

Method

In a food processor, blitz the pecans and cashew nuts until crumbly and no large pieces remain. Add in the rest of the ingredients, apart from the desiccated coconut, and blend on high until a dough forms. Pull the dough apart and roll into small balls. Coat each ball in a generous amount of desiccated coconut and place in the fridge to set. I recommend keeping in the fridge until ready to eat.
